- 50 middleneck clams
- 2 sticks unsalted butter
- 8 large garlic cloves, minced
- 1/2 cup white wine
- 1/2 cup heavy cream
- 4 tbs minced chives
- pepper to taste
- Preheat grill over medium heat
- rinse clams
- Melt butter in saucepan over low heat. Add garlic and sauté until fragrant. Add white wine and heavy cream. Cook until cooked down by half and remove from heat. Add chives and season with pepper.
- Arrange clams in 13x9 inch pan. Pour butter mixture over and cook until clams open.
